Ingredients 

Main Ingredients

  • 12 pieces lasagna noodles
  • 2 cups marinara sauce
  • 1 cup vegan ricotta
  • 2 cups spinach
  • 1 cup mushrooms, sliced
  • 1 cup zucchini, sliced
  • 1 cup vegan mozzarella
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions.
  3. In a pan, heat olive oil and sauté garlic, mushrooms, and zucchini until tender.
  4. Spread a thin layer of marinara sauce on the bottom of a baking dish.
  5. Layer noodles, vegan ricotta, spinach, sautéed veggies, and marinara sauce.
  6. Repeat layers, ending with a layer of noodles and marinara sauce.
  7. Top with vegan mozzarella.
  8. Cover with foil and bake for 30 minutes.
  9. Remove foil and bake for another 10 minutes until cheese is melted and bubbly.
  10. Let it cool for a few minutes before serving.
