Vegan Layered Lentil Casserole Recipe
A hearty and delicious vegan casserole layered with lentils and vegetables.

Main Ingredients
- 1 cup lentils
- 2 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 zucchini, sliced
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 cup breadcrumbs
- 2 tablespoon olive oil
Preheat oven to 375°F (190°C).
Cook lentils in vegetable broth until tender.
Sauté onion, garlic, bell pepper, and zucchini in olive oil until soft.
Add diced tomatoes, cumin, paprika, salt, and pepper. Simmer for 10 minutes.
Layer lentils and vegetable mixture in a casserole dish.
Top with breadcrumbs and bake for 20 minutes until golden.
