  • 2 cups all-purpose flour
  • cup sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon poppy seeds
  • ½ cup coconut oil, solid
  • ¾ cup unsweetened almond milk or any plant-based milk
  • 1 tablespoon lemon zest from 1 lemon
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and poppy seeds.
  3. Add the solid coconut oil to the dry ingredients. Use a pastry cutter or your hands to cut the oil into the flour mixture until it resembles coarse crumbs.
  4. In a small bowl, mix the almond milk, lemon zest, and vanilla extract. Pour this mixture into the dry ingredients and stir until just combined.
  5. Turn the dough out onto a lightly floured surface and shape it into a circle about 1-inch thick. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  6. Bake for 18-20 minutes, or until the scones are golden brown. Let cool slightly before serving.
