  • 1 tablespoon baking powder
  • 1 tablespoon poppy seeds
  • 0.5 teaspoon salt
  • 1 cup almond milk
  • 0.5 cup vegetable oil
  • 2 tablespoon lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, whisk together the flour, sugar, baking powder, poppy seeds, and salt.
  3. In another bowl, mix the almond milk, vegetable oil, lemon juice, lemon zest, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Pour the batter into the prepared cake pan and bake for 45 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
