Ingredients 

Main Ingredients

  • 2 cups All-purpose flour
  • ¼ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • ¼ cup Coconut oil (solid)
  • 1 tablespoon Chia seeds
  • 1 tablespoon Lemon zest
  • ¾ cup Coconut milk
  • 1 tablespoon Lemon juice

Instructions 

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the solid coconut oil until the mixture resembles coarse crumbs.
  4. Stir in chia seeds and lemon zest.
  5. In a separate bowl, mix coconut milk and lemon juice. Add to the dry ingredients and stir until just combined.
  6. Turn the dough out onto a floured surface and knead gently. Pat into a circle about 1-inch thick. Cut into 8 wedges and place on the prepared baking sheet.
  7. Bake for 18-20 minutes, or until golden brown. Let cool slightly before serving.
