Ingredients 

Main Ingredients

  • 1 cup green lentils
  • 2 cups water
  • 1 apple, diced
  • 1 carrot, grated
  • ¼ cup red onion, finely chopped
  • 2 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Instructions 

  1. Rinse lentils under cold water.
  2. In a pot, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20-25 minutes until tender. Drain and let cool.
  3. In a mixing bowl, combine cooked lentils, diced apple, grated carrot, and chopped red onion.
  4. Drizzle with olive oil and apple cider vinegar. Season with salt and pepper. Toss to combine.
  5. Serve chilled or at room temperature.
