Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup coconut oil, melted
  • 0.25 cup maple syrup

Filling

  • 1 cup coconut cream
  • 0.75 cup fresh lime juice
  • 0.5 cup maple syrup
  • 3 tablespoons cornstarch
  • 1 tablespoon lime zest

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a mixing bowl, combine flour, melted coconut oil, and maple syrup. Press mixture into the baking dish to form the crust.
  3. Bake the crust for 10 minutes, then set aside to cool.
  4. In another bowl, whisk together coconut cream, lime juice, maple syrup, cornstarch, and lime zest until smooth.
  5. Pour the filling over the cooled crust and bake for another 15 minutes, or until set.
  6. Let the bars cool completely before slicing. Enjoy!
