Ingredients 

Main Ingredients

  • 2 cups Hearts of Palm chopped
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
  2. Add chopped hearts of palm, paprika, salt, and black pepper. Cook for another 5 minutes.
  3. Pour in vegetable broth and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Use a blender to puree the soup until smooth. Return to the pot and heat through before serving.
