Instructions
Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until translucent.
Add chopped hearts of palm, paprika, salt, and black pepper. Cook for another 5 minutes.
Pour in vegetable broth and coconut milk. Bring to a boil, then reduce heat and simmer for 20 minutes.
Use a blender to puree the soup until smooth. Return to the pot and heat through before serving.
