  • ½ cup Unsweetened soy milk
  • 1 cup Vegetable oil
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Salt

Instructions 

  1. 1. Add soy milk, apple cider vinegar, Dijon mustard, and salt to a blender.
  2. 2. Blend on high until well combined.
  3. 3. With the blender running, slowly drizzle in the vegetable oil until the mixture thickens.
  4. 4. Taste and adjust seasoning if needed.
  5. 5. Transfer to a jar and refrigerate. It will thicken more as it chills.
