Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 1 lime juiced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup cilantro chopped

Instructions 

  1. 1. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until quinoa is cooked.
  2. 2. In a mixing bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, and avocado.
  3. 3. In a small bowl, whisk together lime juice, chili powder, cumin, salt, and olive oil. Pour over quinoa mixture and toss to combine.
  4. 4. Garnish with chopped cilantro and serve.
