Vegan Mushroom and Farro Soup Recipe

Main Ingredients
- 1 cup Farro rinsed
- 2 tablespoon Olive oil
- 1 large Onion diced
- 3 cloves Garlic minced
- 8 oz Mushrooms sliced
- 4 cups Vegetable broth
- 1 cup Diced tomatoes canned
- 1 teaspoon Dried thyme
- 1 teaspoon Dried rosemary
- 1 teaspoon Salt to taste
- ½ teaspoon Black pepper to taste
- 2 cups Kale chopped
1. Heat olive oil in a pot over medium heat. Add diced onion and cook until translucent.
2. Add minced garlic and sliced mushrooms. Cook until mushrooms are tender.
3. Stir in rinsed farro, vegetable broth, diced tomatoes, dried thyme, and dried rosemary. Bring to a boil.
4. Reduce heat and simmer for about 30 minutes, until farro is cooked.
5. Add chopped kale and cook for an additional 10 minutes. Season with salt and black pepper to taste.
6. Serve hot and enjoy!
