Vegan Mushroom Thanksgiving Stuffing Recipe

- 1 lb Mushrooms sliced
- 1 cup Onion chopped
- 3 cloves Garlic minced
- 4 cups Bread Cubes stale
- 2 cups Vegetable Broth
- 1 tablespoon Olive Oil
- 1 teaspoon Thyme dried
- 1 teaspoon Sage dried
- 1 teaspoon Salt
- 0.5 teaspoon Black Pepper
Preheat oven to 350°F (175°C).
In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until translucent.
Add mushrooms, thyme, sage, salt, and pepper. Cook until mushrooms are tender.
In a large bowl, combine bread cubes and mushroom mixture. Pour vegetable broth over and mix well.
Transfer to a baking dish and bake for 30-35 minutes, until top is golden brown.
