Instructions
1. Heat olive oil in a large pan over medium heat.
2. Add chopped onion and cook until translucent.
3. Stir in minced garlic, red bell pepper, and green beans. Cook for 5 minutes.
4. Add diced tomato and cook for another 5 minutes.
5. Stir in paella rice, vegetable broth, smoked paprika, and saffron threads. Bring to a boil.
6. Reduce heat to low and simmer for 20 minutes, or until rice is cooked.
7. Add peas and cook for an additional 5 minutes.
8. Serve hot with lemon wedges on the side.
