Ingredients 

Pancake Batter

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder
  • teaspoon salt
  • 1 cup non-dairy milk
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil

Instructions 

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, combine the non-dairy milk and apple cider vinegar. Let it sit for a minute to curdle.
  3. Add the vanilla extract and vegetable oil to the milk mixture. Stir well.
  4. Pour the wet ingredients into the dry ingredients. Mix until just combined. Do not overmix.
  5. Heat a non-stick skillet over medium heat. Lightly grease if necessary.
  6. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with your favorite toppings.
