Ingredients 

Pie Crust

  • 2 cups All-purpose flour
  • ½ cup Vegan butter cold
  • ¼ cup Ice water

Filling

  • 4 cups Mixed berries fresh or frozen
  • ½ cup Sugar
  • 2 tablespoon Cornstarch
  • 1 teaspoon Lemon juice

Instructions 

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine flour and cold vegan butter. Mix until crumbly.
  3. Add ice water gradually until the dough comes together. Form into a ball, wrap in plastic, and refrigerate for 30 minutes.
  4. Roll out the dough and place it in a pie dish. Trim excess dough.
  5. In another bowl, mix berries, sugar, cornstarch, and lemon juice. Pour into the pie crust.
  6. Roll out remaining dough and cover the pie. Seal edges and cut slits on top.
  7. Bake for 45 minutes or until golden brown. Let it cool before serving.
