Ingredients 

Main Ingredients

  • 2 cups potatoes, diced
  • 2 cups butternut squash, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can coconut milk
  • 1 cup vegetable broth
  • 2 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 2 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic, sauté until translucent.
  3. Add curry powder, cumin, and coriander, cook for 1 minute.
  4. Add potatoes and butternut squash, stir to coat with spices.
  5. Pour in coconut milk and vegetable broth, bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes, until vegetables are tender.
  7. Season with salt and pepper.
  8. Garnish with fresh cilantro before serving.
