Ingredients 

Main Ingredients

  • 4 cups Potatoes, peeled and diced
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 medium Onion, chopped
  • 3 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 cup Coconut milk
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, sauté onions and garlic until translucent.
  2. 2. Add carrots, celery, and potatoes. Cook for 5 minutes.
  3. 3. Pour in vegetable broth. Bring to a boil, then simmer for 20 minutes.
  4. 4. Blend the soup until smooth. Return to pot.
  5. 5. Stir in coconut milk. Season with salt and pepper.
  6. 6. Serve hot.
