  • 4 medium potatoes peeled and diced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup guacamole

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the diced potatoes and cook until tender and golden brown, about 15 minutes.
  3. 3. Stir in the chili powder, cumin, garlic powder, and onion powder. Cook for another 5 minutes.
  4. 4. Warm the corn tortillas in a separate skillet or microwave.
  5. 5. Assemble the tacos by placing a portion of the potato mixture on each tortilla. Top with shredded lettuce, diced tomatoes, and guacamole.
