Ingredients 

Main Ingredients

  • 4 cups Vegetable Broth
  • 4 Potatoes, peeled and diced
  • 2 cups Carrots, sliced
  • 1 cup Celery, chopped
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Thyme

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the onion and garlic, and sauté until softened.
  2. 2. Add the carrots, celery, and potatoes. Cook for about 5 minutes, stirring occasionally.
  3. 3. Pour in the vegetable broth, and bring to a boil. Reduce heat and let it simmer for about 20 minutes, or until the vegetables are tender.
  4. 4. Season with salt, pepper, and thyme. Adjust seasoning to taste.
  5. 5. Serve hot and enjoy!
