- 1 can pumpkin puree 15 oz
- 1 cup full-fat coconut milk
- ¾ cup brown sugar
- ¼ cup cornstarch
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- 1 pre-made vegan pie crust
Preheat oven to 350°F (175°C).
In a large bowl, mix pumpkin puree, coconut milk, brown sugar, cornstarch, cinnamon, ginger, nutmeg, cloves, and salt until smooth.
Pour the mixture into the pre-made pie crust.
Bake for 60 minutes or until the filling is set.
Let the pie cool completely before serving.
