  • 1 cup full-fat coconut milk
  • ¾ cup brown sugar
  • ¼ cup cornstarch
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • 1 pre-made vegan pie crust

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix pumpkin puree, coconut milk, brown sugar, cornstarch, cinnamon, ginger, nutmeg, cloves, and salt until smooth.
  3. Pour the mixture into the pre-made pie crust.
  4. Bake for 60 minutes or until the filling is set.
  5. Let the pie cool completely before serving.
