Ingredients

  • 1 cup Pumpkin puree
  • ½ cup Coconut oil, melted
  • 1 cup Sugar
  • ¼ cup Almond milk
  • 1 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • 2 teaspoon Pumpkin pie spice

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the pumpkin puree, melted coconut oil, sugar, almond milk, and vanilla extract.
  3. In another bowl, mix the flour, baking soda, salt, and pumpkin pie spice.
  4. Combine the wet and dry ingredients until just mixed. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
