Ingredients 

Dough

  • 3 ¼ cups all-purpose flour
  • ¼ cup sugar
  • 2 ¼ teaspoon active dry yeast
  • ½ cup pumpkin puree
  • ½ cup almond milk
  • ¼ cup vegan butter, melted
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ¼ teaspoon cloves

Filling

  • ¼ cup brown sugar
  • 1 tablespoon cinnamon
  • ¼ cup vegan butter, melted for filling

Instructions 

  1. In a large bowl, combine flour, sugar, and yeast.
  2. In a separate bowl, mix pumpkin puree, almond milk, melted vegan butter, and salt.
  3. Combine wet and dry ingredients, knead until smooth. Let rise for 1 hour.
  4. Roll dough into a rectangle, spread melted vegan butter, sprinkle brown sugar and cinnamon.
  5. Roll up dough, cut into 8 pieces, place in a greased baking dish.
  6. Bake at 350°F (175°C) for 25 minutes.
