Dough
- 3 ¼ cups all-purpose flour
- ¼ cup sugar
- 2 ¼ teaspoon active dry yeast
- ½ cup pumpkin puree
- ½ cup almond milk
- ¼ cup vegan butter, melted
- 1 teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon ginger
- ¼ teaspoon cloves
Filling
- ¼ cup brown sugar
- 1 tablespoon cinnamon
- ¼ cup vegan butter, melted for filling
In a large bowl, combine flour, sugar, and yeast.
In a separate bowl, mix pumpkin puree, almond milk, melted vegan butter, and salt.
Combine wet and dry ingredients, knead until smooth. Let rise for 1 hour.
Roll dough into a rectangle, spread melted vegan butter, sprinkle brown sugar and cinnamon.
Roll up dough, cut into 8 pieces, place in a greased baking dish.
Bake at 350°F (175°C) for 25 minutes.
