Vegan Quinoa Salad with Vegetables

Main Ingredients
- 1 cup quinoa rinsed
- 2 cups water
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- 1 cup bell pepper diced
- ¼ cup red onion finely chopped
- ¼ cup fresh parsley chopped
- 2 tablespoons olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
1. Rinse the quinoa under cold water.
2. In a saucepan, bring water to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
3. Remove from heat and let quinoa cool.
4. In a large mixing bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
5. Add cooled quinoa to the vegetables.
6. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss to combine.
7. Serve chilled or at room temperature.
