Ingredients 

Main Ingredients

  • 4 Bell Peppers tops cut off and seeds removed
  • 1 cup Quinoa rinsed
  • 2 cups Vegetable Broth
  • 1 can Black Beans drained and rinsed
  • 1 cup Corn frozen or fresh
  • 1 Onion diced
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • to taste Salt and Pepper
  • 1 tablespoon Olive Oil

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cook quinoa in vegetable broth according to package instructions.
  3. In a large mixing bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
  4. Stuff each bell pepper with the quinoa mixture.
  5. Place stuffed peppers in a baking dish and drizzle with olive oil.
  6. Bake for 35-40 minutes, until peppers are tender.
