Vegan Quinoa Stuffed Peppers

Main Ingredients
- 4 Bell Peppers tops cut off and seeds removed
 - 1 cup Quinoa rinsed
 - 2 cups Vegetable Broth
 - 1 can Black Beans drained and rinsed
 - 1 cup Corn frozen or fresh
 - 1 Onion diced
 - 2 cloves Garlic minced
 - 1 teaspoon Cumin
 - 1 teaspoon Chili Powder
 - to taste Salt and Pepper
 - 1 tablespoon Olive Oil
 
 
Preheat oven to 375°F (190°C).
Cook quinoa in vegetable broth according to package instructions.
In a large mixing bowl, combine cooked quinoa, black beans, corn, onion, garlic, cumin, chili powder, salt, and pepper.
Stuff each bell pepper with the quinoa mixture.
Place stuffed peppers in a baking dish and drizzle with olive oil.
Bake for 35-40 minutes, until peppers are tender.
