- 1 cup dried red beans soaked overnight
- 1 cup rice
- 1 tablespoon olive oil
- 1 onion chopped
- 2 garlic cloves minced
- 1 bell pepper chopped
- 1 teaspoon smoked paprika
- 1 teaspoon thyme dried
- 1 teaspoon cumin
- 2 cups vegetable broth
- to taste salt
- to taste black pepper
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion, garlic, and bell pepper. Sauté until softened.
3. Add the smoked paprika, thyme, and cumin. Stir to combine.
4. Add the soaked red beans and vegetable broth. Bring to a boil.
5. Reduce heat to low and simmer for about 45 minutes, or until beans are tender.
6. Cook the rice according to package instructions.
7. Season the beans with salt and black pepper to taste.
8. Serve the beans over the cooked rice.
