Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, chopped
  • 1 celery stalk, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • to taste salt and pepper
  • 1 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the chopped onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
  3. 3. Stir in the cumin, coriander, and turmeric. Cook for another minute.
  4. 4. Add the red lentils, vegetable broth, and diced tomatoes. Bring to a boil.
  5. 5. Reduce heat and let it simmer for about 25 minutes, or until the lentils are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
