Main Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 celery stalk, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 4 cups vegetable broth
- 1 can diced tomatoes
- to taste salt and pepper
- 1 tablespoon olive oil
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
3. Stir in the cumin, coriander, and turmeric. Cook for another minute.
4. Add the red lentils, vegetable broth, and diced tomatoes. Bring to a boil.
5. Reduce heat and let it simmer for about 25 minutes, or until the lentils are tender.
6. Season with salt and pepper to taste. Serve hot.
