Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 medium carrots chopped
  • 1 medium zucchini chopped
  • 1 can diced tomatoes 400 grams
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onions and minced garlic. Sauté until onions are translucent.
  3. 3. Add chopped carrots and zucchini. Cook for another 5 minutes.
  4. 4. Stir in ground cumin, ground coriander, and turmeric. Cook for 1 minute.
  5. 5. Add red lentils, diced tomatoes, and vegetable broth. Bring to a boil.
  6. 6. Reduce heat and simmer for 20-25 minutes, or until lentils are tender.
  7. 7. Season with salt and black pepper to taste. Serve hot.
