Ingredients

  • 2 cups Cooked pinto beans
  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • ½ cup Vegetable broth

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic and cook for another minute.
  4. Add cooked pinto beans, ground cumin, and salt. Stir well.
  5. Pour in vegetable broth and mash the beans with a wooden spoon until desired consistency is reached.
  6. Cook for an additional 5 minutes, stirring occasionally. Serve warm.
