Ingredients 

Main Ingredients

  • 4 red bell peppers
  • 4 large carrots
  • 1 large onion
  • 3 cloves garlic
  • 4 cups vegetable broth
  • 2 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Cut bell peppers and carrots into chunks. Peel and quarter the onion.
  3. Place vegetables on a baking sheet, drizzle with olive oil, and season with salt and pepper.
  4. Roast for 25-30 minutes until tender and slightly charred.
  5. Transfer roasted vegetables to a blender. Add garlic and vegetable broth.
  6. Blend until smooth. Adjust seasoning if needed.
  7. Heat soup in a pot over medium heat until warmed through.
