Vegan Soba Noodle Salad Recipe

Main Ingredients
- 8 oz soba noodles
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1 cup edamame
- ¼ cup chopped green onions
- ¼ cup chopped cilantro
- ¼ cup soy sauce
- 2 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon maple syrup
- 1 teaspoon grated ginger
- 1 clove garlic, minced
- 1 tablespoon sesame seeds
Cook soba noodles according to package instructions. Drain and rinse with cold water.
In a large bowl, combine soba noodles, carrots, bell peppers, edamame, green onions, and cilantro.
In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, maple syrup, ginger, and garlic.
Pour dressing over the noodle mixture and toss to combine.
Sprinkle with sesame seeds before serving.
