Ingredients 

Main Ingredients

  • 1 cup long-grain white rice
  • 2 cups vegetable broth
  • 1 can diced tomatoes (15 oz)
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • to taste Salt and pepper
  • 2 tablespoon olive oil
  • optional Fresh cilantro for garnish

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add chopped onion and bell pepper, sauté until softened.
  3. Stir in minced garlic, cumin, and smoked paprika, cook for another minute.
  4. Add rice, stir to coat with the oil and spices.
  5. Pour in vegetable broth and diced tomatoes (with juice).
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes until rice is cooked.
  7. Season with salt and pepper to taste.
  8. Garnish with fresh cilantro if desired.
