Ingredients

  • 2 cups spelt flour
  • 1 cup almond milk
  • ½ cup maple syrup
  • ¼ cup coconut oil (melted)
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 cup blueberries (optional)

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix the spelt flour, baking powder, and salt.
  3. In another bowl, whisk together the almond milk, maple syrup, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the blueberries if using.
  6. Divide the batter evenly into a muffin tin lined with paper cups.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
