Ingredients 

Main Ingredients

  • 8 oz pasta
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 can artichoke hearts, drained and chopped
  • 4 cups fresh spinach
  • 1 cup unsweetened almond milk
  • 1 tablespoon nutritional yeast
  • Salt and pepper to taste

Instructions 

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a large pan, heat olive oil over medium heat. Add garlic and sauté until fragrant.
  3. Add artichoke hearts and spinach. Cook until spinach is wilted.
  4. Stir in almond milk and nutritional yeast. Cook for a few minutes until the sauce thickens.
  5. Add cooked pasta to the pan. Toss to combine. Season with salt and pepper.
  6. Serve hot.
