  • 2 cups split peas rinsed
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 carrots carrots chopped
  • 2 stalks celery chopped
  • 1 tablespoon olive oil
  • 6 cups vegetable broth
  • 1 teaspoon thyme dried
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, garlic, carrots, and celery. Cook until vegetables are softened, about 10 minutes.
  3. Add split peas, vegetable broth, thyme, salt, and pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for about 1 hour, or until peas are tender.
  5. Adjust seasoning if necessary. Serve hot.
