- 2 cups split peas rinsed
- 1 large onion chopped
- 2 cloves garlic minced
- 2 carrots carrots chopped
- 2 stalks celery chopped
- 1 tablespoon olive oil
- 6 cups vegetable broth
- 1 teaspoon thyme dried
- 1 teaspoon salt or to taste
- ½ teaspoon black pepper or to taste
Heat olive oil in a large pot over medium heat.
Add onions, garlic, carrots, and celery. Cook until vegetables are softened, about 10 minutes.
Add split peas, vegetable broth, thyme, salt, and pepper. Bring to a boil.
Reduce heat to low, cover, and simmer for about 1 hour, or until peas are tender.
Adjust seasoning if necessary. Serve hot.
