Main Ingredients
- 4 Bell peppers tops cut off and seeds removed
- 1 cup Cooked quinoa
- 1 cup Black beans rinsed and drained
- 1 cup Corn kernels fresh or frozen
- 1 Onion diced
- 2 cloves Garlic minced
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 cup Tomato sauce
- to taste Salt and pepper
Preheat your oven to 375°F (190°C).
In a large mixing bowl, combine cooked quinoa, black beans, corn, diced onion, minced garlic, cumin, paprika, and tomato sauce. Mix well.
Season the mixture with salt and pepper to taste.
Stuff each bell pepper with the quinoa mixture and place them upright in a baking dish.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
Remove the foil and bake for an additional 15 minutes, or until the peppers are tender.
Serve hot and enjoy!
