Vegan Sweet Potato and Bean Burritos

Main Ingredients
- 2 large sweet potatoes peeled and diced
- 1 can black beans drained and rinsed
- 1 red bell pepper chopped
- 1 small red onion chopped
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 4 large flour tortillas
- 1 avocado sliced
- Fresh cilantro chopped (optional)
- Salsa optional
Preheat oven to 400°F (200°C).
Toss sweet potatoes with olive oil, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
In a large pan, sauté onion and garlic until softened.
Add black beans and bell pepper to the pan, cook for another 5 minutes.
Mix in roasted sweet potatoes.
Warm tortillas in a dry skillet.
Fill each tortilla with the sweet potato and bean mixture, add avocado slices, cilantro, and salsa if using.
Roll up burritos and serve.
