Ingredients 

Main Ingredients

  • 2 large sweet potatoes peeled and diced
  • 1 can black beans drained and rinsed
  • 1 red bell pepper chopped
  • 1 small red onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 4 large flour tortillas
  • 1 avocado sliced
  • Fresh cilantro chopped (optional)
  • Salsa optional

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, cumin, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  3. In a large pan, sauté onion and garlic until softened.
  4. Add black beans and bell pepper to the pan, cook for another 5 minutes.
  5. Mix in roasted sweet potatoes.
  6. Warm tortillas in a dry skillet.
  7. Fill each tortilla with the sweet potato and bean mixture, add avocado slices, cilantro, and salsa if using.
  8. Roll up burritos and serve.
