Ingredients

  • 1 cup mashed sweet potato
  • ½ cup coconut oil melted
  • ½ cup maple syrup
  • ¼ cup almond milk
  • 1 teaspoon vanilla extract
  • 1 ¾ cup all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine mashed sweet potato, melted coconut oil, maple syrup, almond milk, and vanilla extract. Mix well.
  3. In another bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
