Ingredients 

Main Ingredients

  • 4 cups mashed sweet potatoes
  • ½ cup coconut milk
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt

Topping

  • 1 cup chopped pecans
  • ¼ cup brown sugar
  • 2 tablespoon vegan butter, melted

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed sweet potatoes, coconut milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix well.
  3. Transfer the sweet potato mixture to a baking dish and spread it out evenly.
  4. In another bowl, mix together the chopped pecans, brown sugar, and melted vegan butter. Sprinkle this mixture evenly over the sweet potato mixture.
  5. Bake in the preheated oven for 30-35 minutes, until the topping is golden brown and the casserole is heated through.
  6. Let it cool for a few minutes before serving. Enjoy!
