Ingredients 

Main Ingredients

  • 2 cups Sweet Potatoes, diced
  • 1 can Chickpeas, drained and rinsed
  • 1 cup Coconut Milk
  • 1 cup Diced Tomatoes
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a pot over medium heat. Add chopped onions and cook until translucent.
  2. Add minced garlic, curry powder, ground cumin, and ground turmeric. Cook for another minute.
  3. Add diced sweet potatoes, chickpeas, diced tomatoes, and coconut milk. Stir well.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until sweet potatoes are tender.
  5. Season with salt and black pepper. Serve hot.
