Pie Filling
- 2 cups mashed sweet potatoes
- 1 cup coconut milk
- ½ cup maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg

Pie Crust
- 1 unit vegan pie crust store-bought or homemade
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine the mashed sweet potatoes, coconut milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until smooth.
Pour the mixture into the vegan pie crust.
