  • 2 cups mashed sweet potatoes
  • 1 cup coconut milk
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt

Pie Crust

  • 1 unit vegan pie crust store-bought or homemade

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mashed sweet potatoes, coconut milk, maple syrup, vanilla extract, ground cinnamon, ground nutmeg, and salt. Mix until smooth.
  3. Pour the mixture into the vegan pie crust.
