  • 2 cups coconut milk
  • ½ cup maple syrup
  • 1 teaspoon vanilla extract

Instructions 

  1. In a saucepan, combine the mashed sweet potato, cooked rice, and coconut milk.
  2. Cook over medium heat, stirring frequently, until the mixture thickens, about 20 minutes.
  3. Add the maple syrup, vanilla extract, ground cinnamon, and salt. Stir well to combine.
  4. Continue to cook for another 10-15 minutes, until the pudding reaches your desired consistency.
  5. Remove from heat and let it cool slightly before serving.
