Main Ingredients
- 2 large sweet potatoes peeled and diced
- 1 medium onion chopped
- 2 cloves garlic minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- to taste salt and pepper
1. In a large pot, sauté the onion and garlic until soft.
2. Add the sweet potatoes, vegetable broth, cumin, and coriander. Bring to a boil, then simmer until the sweet potatoes are tender, about 20 minutes.
3. Use a blender to puree the soup until smooth.
4. Stir in the coconut milk and season with salt and pepper to taste. Heat through and serve.
