Ingredients

  • 2 large sweet potatoes peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, sauté the onion and garlic until soft.
  2. 2. Add the sweet potatoes, vegetable broth, cumin, and coriander. Bring to a boil, then simmer until the sweet potatoes are tender, about 20 minutes.
