Ingredients 

Main Ingredients

  • 1 pineapple, peeled and sliced
  • 1 red onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoon olive oil
  • 1 can jackfruit, drained and shredded
  • 8 small corn tortillas
  • Fresh cilantro, chopped
  • Lime wedges

Instructions 

  1. Preheat grill or grill pan over medium-high heat.
  2. Grill pineapple slices until charred, about 3 minutes per side. Remove and chop into small pieces.
  3. In a large skillet, heat olive oil over medium heat. Add onion and garlic, cook until softened.
  4. Add chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir to combine.
  5. Add shredded jackfruit to the skillet, cook until heated through and slightly crispy.
  6. Warm tortillas on the grill or in a skillet.
  7. Assemble tacos with jackfruit mixture, grilled pineapple, fresh cilantro, and a squeeze of lime.
