Ingredients 

Taco Filling

  • 1 cup Black Beans cooked
  • 1 cup Corn Kernels cooked
  • 1 cup Diced Tomatoes
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • 1 tablespoon Olive Oil
  • 8 Taco Shells

Toppings

  • 1 cup Shredded Lettuce
  • 1 cup Diced Avocado
  • 1 cup Salsa

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the black beans, corn, diced tomatoes, cumin, and chili powder. Cook for 5-7 minutes, stirring occasionally.
  3. Warm the taco shells according to package instructions.
  4. Fill each taco shell with the bean mixture and top with shredded lettuce, diced avocado, and salsa.
