Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
  • 2 tablespoon Green Curry Paste
  • 1 cup Mixed Vegetables (bell peppers, carrots, broccoli) chopped
  • 1 tablespoon Soy Sauce
  • 1 teaspoon Sugar
  • 1 handful Fresh Basil chopped

Instructions 

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the green curry paste and cook for 1-2 minutes until fragrant.
  3. Pour in the coconut milk and vegetable broth, and bring to a simmer.
  4. Add the mixed vegetables and cook for 10-15 minutes until tender.
  5. Stir in the soy sauce, sugar, and fresh basil. Cook for another 2-3 minutes.
  6. Serve hot with rice or noodles.
