Ingredients 

Main Ingredients

  • 2 cups elbow macaroni
  • 1 cup raw cashews
  • 1 cup water
  • ¼ cup nutritional yeast
  • 2 tablespoon lemon juice
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon turmeric
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • ½ cup diced tomatoes
  • ¼ cup chopped green onions

Instructions 

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. In a blender, combine cashews, water, nutritional yeast, lemon juice, soy sauce, garlic powder, onion powder, turmeric, salt, and pepper. Blend until smooth.
  3. In a large pan, heat olive oil over medium heat. Add the cashew sauce and cook for 5 minutes, stirring frequently.
  4. Add cooked macaroni to the pan and mix well.
  5. Stir in diced tomatoes and green onions. Cook for another 2-3 minutes.
  6. Serve hot.
