Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • ¼ cup Vegan Mayonnaise
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Lemon Juice freshly squeezed
  • ¼ cup Celery finely chopped
  • ¼ cup Red Onion finely chopped
  • ¼ teaspoon Salt
  • ¼ teaspoon Black Pepper
  • 8 slices Bread whole grain or your choice
  • 4 slices Vegan Cheese

Instructions 

  1. 1. In a mixing bowl, mash the chickpeas with a fork until flaky.
  2. 2. Add the vegan mayonnaise, Dijon mustard, lemon juice, celery, red onion, salt, and black pepper. Mix well.
  3. 3. Spread the chickpea mixture onto 4 slices of bread. Top each with a slice of vegan cheese and another slice of bread.
  4. 4. Heat a skillet over medium heat. Cook the sandwiches for 3-4 minutes on each side, until golden brown and the cheese is melted.
  5. 5. Serve hot and enjoy!
