Vegan Tuna Melt
A delicious vegan twist on the classic tuna melt, made with chickpeas and vegan cheese.

Main Ingredients
- 1 can Chickpeas drained and rinsed
- ¼ cup Vegan Mayonnaise
- 1 tablespoon Dijon Mustard
- 1 tablespoon Lemon Juice freshly squeezed
- ¼ cup Celery finely chopped
- ¼ cup Red Onion finely chopped
- ¼ teaspoon Salt
- ¼ teaspoon Black Pepper
- 8 slices Bread whole grain or your choice
- 4 slices Vegan Cheese
1. In a mixing bowl, mash the chickpeas with a fork until flaky.
2. Add the vegan mayonnaise, Dijon mustard, lemon juice, celery, red onion, salt, and black pepper. Mix well.
3. Spread the chickpea mixture onto 4 slices of bread. Top each with a slice of vegan cheese and another slice of bread.
4. Heat a skillet over medium heat. Cook the sandwiches for 3-4 minutes on each side, until golden brown and the cheese is melted.
5. Serve hot and enjoy!
