Ingredients 

Main Ingredients

  • 1 cup red lentils
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • to taste salt and pepper
  • 1 tablespoon lemon juice freshly squeezed

Instructions 

  1. 1. Heat olive oil in a pot over medium heat. Add chopped onions and sauté until translucent.
  2. 2. Add minced garlic and cook for another minute.
  3. 3. Stir in tomato paste, ground cumin, and ground paprika. Cook for 2-3 minutes.
  4. 4. Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
  5. 5. Use a blender to puree the soup until smooth. Return to pot and reheat if necessary.
  6. 6. Stir in lemon juice and season with salt and pepper to taste.
  7. 7. Serve hot, garnished with fresh herbs if desired.
