Cake Ingredients

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup almond milk
  • ½ cup vegetable oil
  • 2 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar

Frosting Ingredients

  • 1 cup vegan cookies, crushed
  • ½ cup vegan butter
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoon almond milk

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. Add the almond milk, vegetable oil, vanilla extract, and apple cider vinegar. Mix until smooth.
  4. Pour the batter into the prepared baking pan. Bake for 30 minutes or until a toothpick inserted into the center comes out clean.
  5. Let the cake cool completely before frosting.
  6. For the frosting, beat the vegan butter until creamy. Gradually add the powdered sugar, vanilla extract, and almond milk. Mix until smooth and fluffy. Fold in the crushed vegan cookies.
  7. Frost the cooled cake and serve.
