Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 Zucchini, chopped
  • 1 can Diced Tomatoes (14.5 oz)
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 1 cup Green Beans, chopped
  • 1 cup Frozen Peas
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add onion and garlic, sauté until softened.
  3. 3. Add carrots, celery, and zucchini. Cook for 5 minutes.
  4. 4. Stir in diced tomatoes, vegetable broth, basil, and oregano. Bring to a boil.
  5. 5. Reduce heat and simmer for 20 minutes.
  6. 6. Add green beans and peas. Cook for another 5 minutes.
  7. 7. Season with salt and pepper to taste. Serve hot.
